Gluten Free begins

I learned that I may have a gluten allergy awhile back but never really took it seriously until last October. I work with a lady whose son was dealing with a lot of intestinal issues and it hit me hard that I could be the one facing major issues so, I went 100% gluten free. It has been a struggle. A friend suggested that I blog my experience as a theraputic opportunity.

In the beginning I was determined to be successful and made the decision to cut out all glutens. The first 2 months were actually quite easy but I am finding it more difficult as the months pass. One of the hardest things to overcome is fast food eating. I was doing well until the last couple of weeks. Cravings have consumed me. I have not given in but I have wanted to so many times.

I found this incredible gluten free baking book that I am going to use to curb some of my gluten cravings. A little over a month ago I found this gluten free cinnamon roll recipe that I will honestly say was not great. What were supposed to be cinnamon rolls turned into a thin cinnamon crunch. The crunch was pretty tasty but I was disappointed that the rolls didn't stay formed.

I won't give up, hence the book. My next attempt; biscuits.
